Recipe: Low Carb Pizza♥

Okay, so this pizza just has to be your dinner tonight. I’m not even giving you a choice! It’s one of the yummiest things I’ve ever made! Almost every time I’ve been in Oslo to visit Tonje we’ve dined at either Olivia or Villa Paradiso, and we always order the same thing; This better-than-life thin crust pizza with parma ham, parmesan, pine nuts, arugula and other yummy things. I’ve been wanting to make it myself for so long, but the only low carb pizza crust I knew how to make was super fluffy, so I didn’t think it fit. We need a thin crust for this one. A few days ago I found a thin crust low carb recipe, and I just had to give it a go. It was so easy to make, and a healthier option whether you eat low carb or just want to make healthier choices overall.

For the crust you need (Recipe from Sjelemat)

♦ 2 eggs
♦ 2 tbs of Cottage Cheese
♦ 2 tbs of coconut flour
♦ ½ teaspoon of salt
♦ ½ teaspoon of baking powder

Just mix it all together with a hand mixer until it’s an even batter, and put it on baking paper in a round cake form. Drizzle some oil on the baking paper so that the crust won’t get stuck. Put it in the oven on 200 degrees for 10-12 minutes, until it gets light brown. Then take the crust out of the oven, and put on the toppings.

For the toppings you need

♦ Tomato sauce
♦ Parma ham (I used serrano, it turned out just as good)
♦ Cheese (The original recipe says Mozzarella, but I just used regular pizza cheese)
♦ Parmesan cheese
♦ Pine nuts
♦ Arugula

Start with pouring on a good tomato sauce, I used a lot! Cover it with regular pizza cheese, but not too much, before you drizzle on parmesan.Put on the ham and pine nuts, and drizzle some more parmesan over. Pop it back into the oven until the cheese melts, and cover it with arugula once it’s done.

It’s so so easy to make, and it tastes heavenly! The crust is really thin and crispy, and it doesn’t taste like eggs or coconut despite the fact that that’s almost all it contains. You need to try this!! I also made one with regular pizza toppings, but the one with the ham and parmesan definitely tasted better! Like something you would get at a restaurant, for sure.

    “1/2 of salt”? Er det halv teskje du mener eller spiseskje? (regner med det er teskje, men vil ikke ta sjansen! hehe). Dette så superdigg ut!

    Hell yeah, im SO going to try this! :)

    I usually make low carb pizza batter with chopped cauliflower and cheese.I really like it, but it doesn’t turn out crispy. So this is a really good option for me to try!

    Har du prøvd å lage pizza med blomkålbunn? Leste om det på Laurenconrad.com for en tid tilbake siden og be inspirert til å prøve det. Var faktisk ganske godt :) Til og med min bror som var ganske skeptisk ga tommel opp på denne :)

    Det er helt sikkert rett, jeg visste ikke helt hvordan jeg skulle gjøre det. Men det ble utrolig godt å steke skinken også, den var ikke noe lenge i ovnen, bare sånn at osten så vidt smeltet, så skinken ble ikke sprø, bare varm og myk :) Så jeg kommer nok til å fortsette å gjøre det på denne måten. Deilig!!

    Heihei. Jeg aner ikke, det er jo bare til å prøve men jeg tror de suger til seg væske veldig forskjellig så da må du nok bruke andre mål. Kanskje noen andre her som vet?

    Go for it! :) Med vanlig pizzafyll holdt den akkurat til to, men jeg ville laget to pizzaer i tilfelle. På denne med skinke er det jo ikke like mye mettende fyll. Å varme opp igjen restene neste dag smaker minst like godt, så jeg liker å lage litt ekstra :)

    Kokosmel er en veldig fin erstatning for vanlig mel. Det har samme konsistens, men er rikt på fiber og proteiner, og lavt på karbohydrater. Det er en av de kjedelige ingrediensene man må kjøpe på helsekost, men jeg bestiller på iHerb, det er mye billigere :) Bruker dette: http://www.iherb.com/Bob-s-Red-Mill-Organic-Coconut-Flour-Gluten-Free-16-oz-1-lb-453-g/10965. Kan brukes til veldig mye, så kjekt å ha i skapet :)

    Hei:) Takk for oppskrift. Prøvde den ut med mandelmel (det jeg hadde i skapet) og litt fiberhusk for å binde væske nettopp, ble en litt snodig smak:P Men smakte ikke så aller værst til kylling! Lurer på hvordan originalversjonen smaker. Er nok godt mulig det er enda bedre, men er ikke så veldig glad i kokos.

    Ååh snodig smak hørtes ikke så bra ut. Bunnen smaker ikke kokos selvom det er kokosmel av en eller annen grunn, så om du har kokosmel bør du absolutt prøve :) Bunnen smaker egentlig veldig lite, som jeg syns er supert siden det er så mange gode smaker oppå :)

    Vet ikke hva jeg gjorde feil, men bunnen ble ikke sprø :( Den var helt myk i grunn, så jeg kunne ikke plukke opp pizzaen. Stekte du på varmluft eller sånn med to streker (vet ikke hva det heter :P)

    Nei, så dumt! Stekte du den lenge nok før du tok på fyllet? Den skal bli ganske crispy da, kanskje du ikke hadde den i lenge nok? Jeg bruker alltid den med to streker, uten at jeg vet hvorfor eller hva det betyr ;p
