Healthy Dinner Tips

Puh! Another super hard workout finished, and I feel awesome. Extremely sore and I can’t move, but still awesome. As I made homemade pizza with insane amounts of cheese for me and my boyfriend last night, I figured I should make a healthier dinner today. This is seriously the best dinner I can imagine! So yummy! And super healthy as well. You need 5 chicken filets, a Maggy Juicy Chicken set and whatever you want on the side. I just made a simple salad of avocado, red onion and tomato. Fries are perfect if you’re gonna indulge. Just follow the instructions on the MJC bag, super easy.

Okay ladies, you simply have to try this!! Soo yummy!!! Not to brag of course (haha), but it tasted like something I could be served in a restaurant! I made a pesto salad for me and my boyfriend, this is what you need;


Pine nuts, feta cheese (everything`s betta with feta), a pesto oil dressing, cherry tomatoes, pasta penne, red onions, arugula and chicken filet. What you do is completely idiot proof, just boil the pasta and slice the chicken. Cook the chicken while you wash and cut up your veggies, mix everything together in a bowl, add the pesto dressing and your dunzo! Took me like 10 minutes.

Sooooo gooood!!!! It`s probably pretty high in calories, but it`s from good fats, so I guess it`s cool. Good fats are good for you :)

I got a tips from a reader about homemade energy bars, so of course Amalie and I had to try it right away!!

DELICIOUS!! These are really good for you and keeps you full for so long, but remember, they’re sort of a calorie bomb because of all the fat from the nuts. It’s good fat though, but one or two pieces is enough :)

Mammas Superrundstykker

To my international readers; I decided to do this post in Norwegian, as the majority of my readers are from Norway, and I don’t know the right terms when it comes to cooking in English. Hope that’s ok!

Okei, så denne oppskriften er bare helt bananas! Rundstykkene blir supergrove, og jeg vil tørre å påstå at det er noe av det sunneste du kan spise til frokost/lunch! De er så grove at man faktisk kan få litt vondt i magen når man begynner å spise de, men dette går over. Etter hvert vil magen fungere mye bedre, og du får ikke ubehag, lover :) Du trenger:

Dansk rugbrød-blanding, solsikkekjerner, grovt sammalt hvetemelt, tørrgjær, hvetekli, havrekli, linfrø, sammalt rug fin og sammalt rug grov. Det virker som veldig mange ingredienser, men de fleste produktene koster bare 13-14kr per pakke. Dessuten holder de til veeeldig mange rundstykker :) Mamma pleier å lage hundrevis av rundstykker på en gang, og lager deigen i en svær balje, haha. Jeg hadde bare en vanlig bolle, så jeg måtte minske mengden litt. Når det kommer til oppskrift, er det egentlig ingen spesiell oppskrift å følge. Man tar bare ca like mye oppi av alt. Jeg brukte 3dl av alt, bortsett fra frøene, der brukte jeg 1dl. Jeg brukte to pakker tørrgjær, og i tillegg til dette må du tilsette litt salt. Man kan også ha i hvetemel, da blir de mye mer luftige. Jeg liker de faktisk best uten hvetemel.

Bland alt det tørre, og tilsett vann. Jeg brukte ca 7-8dl vann, men se litt an hvor mye du trenger. Så må du kna deigen, helst i minst 15 minutter. Dette gjør at rundstykkene blir luftige. Deretter hever du deigen i ca 1 time.

Når deigen har hevet knar du litt til. Så lager du små baller og klapper de flate, og lar de stå litt til heving, ca 30min. Du velger selvfølgelig selv hvor store du vil lage de, mamma lager de svære, jeg foretrekker de litt mindre. Så klapper jeg de ganske flate fordi jeg liker skorpen så godt, men man kan selvfølgelig gjøre de rundere :)

Ha de i ovnen på 225 grader i ca 25 minutter. Så får du disse herlighetene :) Jeg fikk 20 rundstykker av denne oppskriften.

Smaker himmelsk med Jarlsberg eller brunost! De smaker definitivt best varme, så det er lurt å ha de i frysen og varme de om morgenen.

Hot tips; Mens du venter på at rundstykkene er i ovnen, slå deg ned i sofakroken med den nyeste utgaven av Streetstyle, hvor nydelige Camilla pryder forsiden.

Tapas Recipe

You’ve requested the recipes of the tapas I made, but unfortunatly I didn’t take any pictures of the food :/ Horrible blogger, I know! But I had some spare ingredients in the fridge, so I made an evening snack for me and my boyfriend. Partly because it’s delicious, partly because I wanted to show you! So here you go, a yummy tapas dish which is so easy, a monkey could do it!

You need: Wraps (I use the ones that are for hotdogs), arugula, pine nuts, sereano ham and creeme cheese (I use Philadelphia)

This was actually perfect for just an evening snack, so you definitely don’t need a full tapas dinner to make this! So yummy :)

I love cooking, but I’m not very experienced in the fish department. Basically, I like my fish raw, served in a maki with rice and avocado. But I thought I’d play around in the kitchen and see if I could make something other than sushi with the salmon. A lot of you probably know how to do this, but for noobs like me, this is idiot proof! I’ve actually never even boiled a potato in my life, so this was a day of firsts for me! Anyways, the receipe;

Season everything with salt and pepper too, I forgot that :) It was soo yummy, especially the potato and yellow turnip mash. So easy and quick, and not to mention healthy :)

Chicken Salad

Okay, last food recipe in a while, promise! But I get questions soo often about what I eat, and I figured I could show you one of my favorite meals :) It’s simple and delicious! Basically it’s just a chicken salad.. But it’s so heavenly! What you need;

Avocados (important), sliced chicken filets, lettuce, tomatoes, red onions, cucumber, corn, croutons, dressing mix, pasta if you’d like and of course feta cheese! As my friend Lisa said it; “Everything’s betta with feta” Haha. Jeez, I miss her!!! Anywho, food. Just slice everything into little pieces..

The dressing mix is delicious, it’s the one called ‘french’ where you just add oil and water. Add the dressing and the hot chicken, and serve! This amount was perfect for 6 peole.

I’m seriously getting water in my mouth of writing this post.. Chicken salad for dinner again? Yes please!!

Muffin Love

Okay, my blog is totally becoming a wifey blog.. Interior, food, everything.. Haha, sorry! But I just have to share this muffin recipe! Most of you probably know how to make muffins, but for those of you who don’t; here’s how it’s done.

A cute cupcake tray and cute cupcake holders are mandatory.. Try to find prettier ones than these that I got, they’re sort of horrible..

Always fill the tray 2/3 full, otherwise it’ll be a mess.. If you add the chocolate before you put them in the oven, they’ll just sink to the bottom, so I take the tray out of the oven and add them when they look like this..

..and add the chocolate..

And when they’re done, they look like this..

Yum-o!!!! It’s so easy and not to mention quick to make!! And it tastes totally heavenly..

You can also add a little cocoa powder to make chocolate muffins, it’s so yummy!

Perfect if you’re having guests, like I had yesterday!

Dinner Tips

Good morning love bugs. I thought I’d tips you about one of my favorite dinners. This one was made super quickly, I usually use fresh vegetables, but yesterday frozen ones had to do. Super yummy anyway! So the dinner is wok, my fave! I usually make it tons of different ways, by using different wok sauces, adding nuts (peanut, cashews ++), and serving it with either noodles, wraps or rice. My favorite frozen mix is the one called “Chinese”. All you need is a veggie mix, two chicken filets and whatever you want to serve it with. Yesterday I served it with wraps, sour cream and shredded cheese, and I added peanuts in the wok for an extra flavor.


Super easy, cheap and not to mention quick to make! Perfect for these remodeling days :) And it’s super healthy too, which is always a plus.

Godiva

I just got home from some gift shopping at Godiva. You simply have to visit this store while in NY! They have so many luxurious chocolates and gifts. I got some chocolate covered strawberries for myself, and lots of delicious chocolate for friends and family.
