Ulriken + Blueberry Protein Pancakes

Hi girlies! I just got back from dropping Ivan off, we’ve had the best day. We went mountain hiking on Ulriken, one of my favorite mountains. It’s rough getting up, but it’s not too far so before you know it you’re done. And the view from the top is just amazing!

After that we headed home, and I made protein pancakes with blueberries for us, and my boyfriend. So so yummy! I swear, they taste just like regular pancakes. I like adding blueberries, because then I don’t even need to put sugar on top. I’ve posted the recipe before, but here goes; 1 box of cottage cheese, two whole eggs, three egg whites, a couple of tablespoons of oatmeal, a bit skimmed milk and some table spoons of Splenda (a sweetener in powder form). I don’t measure anything up, I just mix the ingredients randomly.. You’ll need an electric hand mixer for this, otherwise it probably won’t even out. When making the pancakes, try to make them thin, otherwise they’ll get really moist inside, and hard to flip. I use frozen blueberries, and just sprinkle them on when the pancake is in the pan. Super healthy, and it really keeps you full for hours and hours. Earlier I used to make these for breakfast as well, I think I need to start doing that again. So yummy!

Now I’m gonna try to make low calorie jelly for the first time, as Ivan’s coming over for dinner tomorrow. Basically it’s just Fun Light, water and a few gelatin sheets. I think the whole thing is just like 30 calories! Not that I count calories or anything, but of course I think it’s fun to make something yummy that you can eat as much as you want of without feeling bad :) I’ll blog it tomorrow if it’s successful!     Flinke dere er! Sukkerfri gelé er godt – Eldorado har sukkerfri vaniljesaus som også smaker veldig godt til :)

    I have to try these pancakes! They just look and sound too delicious! How much cottage cheese is in a box? I live in Denmark so I’m thinking it might not be the same :)

    wow, breath-taking view! just gorgeous! i live in a similarly beautiful place, israel. and taking hikes is one of my favorite hobbies! my hubby and i plan on taking a big one when it cools down a bit, in october and i cant wait!! and those blueberry pancakes look SO good, thanks for posting, i will definetly have to try!!!!

    Hei Søte! Hvordan i alle dager får du til å steke disse? Jeg prøvde først i vaffelvern og setter av morgendagen til å skrape ut fastbrent røre (fnis), deretter i panna, men det gikk heller dårlig, så endte opp med en deigete røre. Datteren min rynket disapproving på nesen og gikk for knekkebrød isteden, mens sønnen min gaflet det i seg med ferske blåbær på, for det smakte jo fortsatt godt. Nå droppet jeg riktignok de frosne blåbærene og gikk for ferske isteden, er det grunnen tro? Vil ha fine pannekaker!

    Hei skjønning, så dumt at de ikke ble vellykket :/ Dessverre kan de være litt vanskelige å få til i blant. Jeg har aldri prøvd røren i vaffeljern selv, men når jeg steker de i panne har jeg margarin i først, og prøver å gjøre pannekaken litt tynn så den ikke blir så tung og dermed vanskelig å snu. Prøv å fordele blåbærne godt slik at det ikke ligger mange i en haug et sted, da detter nok pannekaken fra hverandre når du skal snu. Hvis røren er deigete er det bare til å tilsette mer melk, jeg justerer ofte røren litt etter hvert. Husk å blande røren veldig godt sammen så den blir helt jevnt, og prøv å få pannekakene tynne og lette :) Håper det går bedre neste gang, fikk helt dårlig samvittighet nå når jeg ser for meg deg skrape røren ut av vaffeljernet, hehe stakkar! Tror ikke det har noe å si om blåbærne er frosne eller ferske, er nok bare mye bedre med ferske :) Klem

    Hehe, det freste godt i vaffeljernet skal jeg si! “mamma, det BJENNERJ!!!” prøver igjen i morgen, helt i hundre over sunn, low calorie pannekaker (eller panneklumperøre, som vi fikk). Loves it, gjerne mere slike! Gele noteres også bak øret ;) thnx babe

    Looks delicious! You should try some low fat banana pancakes; all you need to use is 3 eggs and 2 banana – and then make small pancakes :-) Tastes so gooood!
