Hi sweets! Sorry for the late update, I’ve been on the run all day and finally got time to sit down with dinner. It’s one of my favorite things to make when I want something yummy and quick, and of course healthy, so I thought I’d share it with you guys.
I’ve had this a lot in New York, basically it’s just a normal wrap with lettuce in stead of regular wraps. I actually prefer my wraps with lettuce now, I think the regular ones steal so much of the flavor if you know what I mean. This just tastes yummy and super fresh. You can of course have whatever you want in them, but I’ll share my fave way of making them.
The first thing you need to do is to wash a few large lettuce leafs (I used iceberg), and let them dry while you’re making the filling. I chopped up red onions, tomatoes and avokados, such a great combo I think. You can use whatever cheese you like, I just used regular Norvegia and melted it on the chicken in the oven a bit. Is there anything better than melted cheese, and lots of it? I think not! I also cooked some sliced bacon..
Add everything to the lettuce leaf, and use the dressing of your choice. I used a ranch dressing, my favorite. Wrap it up like so..
..cut it in half, and voila, dig in!
I often make lettuce wraps for breakfast or lunch too, and put things like cottage cheese, turkey, cucumber and peppers in. They’re also heavenly with feta cheese, and can be used for tacos. Such a smart way to cut the carbs! Now I’m about to pack for Oslo, hope you’ve all had a great day♥
