Power Salad

A good chicken salad is one of my favorite dinners. It’s filling, but it feels light and fresh at the same time, and I can’t get enough! Luckily it’s a big favorite for both me and my man, so we usually have this for dinner several times a week. A chicken salad is pretty basic and not complicated at all, but I thought I’d walk you through how I make my absolute favorite one. Even though it’s a salad, it’s filled with calories and fats, so this one I call the power salad.

After inspiration from my mom, I always serve salads on a big platter in stead of in a bowl, I think it looks so much more delicate and appetizing this way. This platter is from Ikea and it’s huge, even though it looks pretty small in the pictures.

Start by covering the whole platter with green lettuce, I prefer romaine or what’s called ‘Rapidsalat’ in Norway. Then add a thinly sliced yellow onion and cherry tomatoes sliced in half. Earlier I always used red onions, but I think the flavor is a bit too dominant, so yellow onions is the favorite now. Then add diced avocados, which are extra yummy with a little lemon juice on them. Add small pieces of bacon, roasted pine nuts, hard boiled eggs, chicken and sprinkle parmesan cheese over it all. Now you’re almost done, but there’s a very important step left. Drizzle olive oil all over the salad, and add lots of pepper mix and sea salt. That last step makes the salad an explosion of flavors in your mouth, and the sea salt adds some crunch as well. It’s better than any salad dressing I’ve ever tried!

I hope you got some inspiration for today’s dinner! This is so simple, yet soo delicious and healthy. Remember the part about the olive oil, pepper mix and sea salt, I don’t know why but that finishing touch makes all the difference in the world!

    Nam! Du lager utrolig mye god mat, virkelig inspirerende. Jeg føler alltid at tiden ikke strekker til å lage fine retter, men nå skal jeg virkelig gjøre en innsats i å lage gode retter.

    Looks deliscious. On a big plate it is also easier to pick and choose what ingredients you want to combine in each mouthful.

    Jeg bruker også alltid olivenolje, havsalt og pepper over salaten, nå liker til og med kjæresten min å spise salat til middag ;)

    Oj! Det så nydelig ut! Men jeg er ikke så god på kylling.. Har du stekt den i forkant og latt den avkjølt seg? Eller kjøpt? Har kjempelyst å prøve denne! :)

    Jeg pleier å brune de litt i panne først, så ovnssteke de. Syns de blir litt for godt stekt i panne og klarer ikke den smaken, så kylling går alltid i ildfast form i ovnen her i huset, da blir det mye saftigere syns jeg :)
