Power Lunch

I get questions on what I eat so often, so I thought I’d show you one of my fave things to make, both for dinner and lunch. Healthy, delicious and extremely filling, while being very low on carbs – perfect! It’s also super easy to make. I just love salads, it’s so fresh and I get so comfortably full afterwards. Without further ado, today’s power lunch;

This salad consists of chopped up tomatoes, cucumber, peppers, red onions, avocado and mixed lettuce, with chicken and bacon on top. I also added three hard boiled eggs, and lots of parmesan cheese. Earlier I always used feta cheese, but now I find shredded parmesan so much yummier! I also added a creamy caesar dressing which is high on fat and low on carbs. This salad is so filling and energizing, definitely something you should try!

Now I’m about to update my Spotify list, then I’m off for a run. I’m so bad at finding new music and usually just listen to the same songs for months, so if you have any good Spotify lists to share with me, please do!♥

    Looks delicious! I think I’m going to try this on the weekend. Only I’m going to use oil and vinegar instead of ceasar dressing. Not the biggest fan of creamy salad dressings. ;)
