Hi darlings! It’s been a little while since the last recipe here on the blog, so I thought I’d share today’s dinner. Nothing fancy, but it was definitely super yummy!
I found the recipe on Caroline‘s blog, but I made a few changes, just because of what I had available in the fridge. I also added eggs and meatballs to make it a bit more filling. But most of it is the same as she posted, that girl really knows her way around the kitchen, that’s for sure. I thought I’d post the recipe here too, with my little twist, for my international readers.
♦5-600 grams of tomatoes
♦One big yellow onion
♦4-5 cloves of garlic
♦2½ dl of double creme
♦1½ dl of water
♦1 tbs of creme fraiche
♦Some vegetable stock
♦Chicken ground beef
So here’s what you do. Make small meatballs from the chicken ground beef, and cook them. Hard boil the eggs. Chop up the onion, garlic, tomatoes and basil. Cook the onion and garlic until it’s all blank in some butter. Then add the tomatoes, the water, double creme and creme fraiche, the basil and the vegetable stock. Season with some salt and pepper. Let it all boil together for about ten minutes, before you put the pot off the stove and blend everything well with a hand mixer. Add the chicken meatballs, which have probably become chilly by now, and boil it all together again. Serve with eggs and some basil on top.
