Healthy Mini Pizzas

Hi sweets! I just got home from a quick mountain hike with Ivan, maan, I’m on fire today!! Now I’m almost in a coma because I’m so exhausted though, so the evening will be spent on the couch with my boyfriend and Ivan. It’s so awesome to have a best friend who is also great friends with my boyfriend. So anyway, I thought I’d show you today’s dinner, which was sooo good!!! You need whole wheat pita breads, then you can put whatever you want on top. I splashed on lots of tomato puree, which is super good for you. Then I made ground beef from chicken, chopped up onions into tiny pieces, champignon and then I had Jarlsberg on top. I always wash the ground beef in cold water after cooking it, as it removes lots of fat. Then I threw everything in the oven on 200 degrees until they looked finished and put lots of arugula on top. Sooo yummy!

I had to put a little sour cream dressing on too, which made it even more delicious.

I thought I would eat at least three of these, but one actually made me perfectly full. I made a few extra ones which I put in my freezer, which is always genius. If I have little time one day I’ll just pop one of these in the oven :) Next time I’ll try to make them with serrano ham, pine nuts, mozzarella cheese and arugula, probably super yummy.     Pitapizza er så godt! Husker en gang jeg feiret bursdagen min, tror jeg var 10-11 år, da fikk alle vennene mine lage sin egen pitapizza, og det var jo superenkelt i tillegg til at alle fikk bare ting de likte på den :)

    Jeg hadde faktisk “italiensk pizza” igår, med hjemmelaget tomatsaus, spekeskinke, mozzarella. pinjekjerner og ruccola igår! Det er så snadder!!

    Hot tips: varm puta rådene kjapt i ovnen, del de i to så får du to bunner i stedet for en per pita :) sprøere bunn, og du kan spise flere ;)

    What a great recipe idea! I’ll definitely have to try this out this weekend! One of my favorite combos is pita, chicken, pesto, and tomato! Pita is such a great substitute for pizza crust!!
