If you follow me on Instagram, I guess it’s no secret that I’ve been eating majorly unhealthy lately, especially in Miami. Pizza and wine was on the menu every day, except for a burger here and there, haha. My usual rule when it comes to food is that I eat healthily and low carb when I’m home, and when I’m traveling I usually eat whatever I want. When I’m home I make no exception whether it’s during the week or even the weekends, but then again, I travel quite often. So since Monday I’ve been back on the healthy track, and I thought I’d share one of my favorite healthy dinners with you guys; Low carb lasagna. It’s soo good, and it tastes almost just as good as the regular one.
I didn’t follow any recipe when making this, I like to vary how I make it. This time I made it with cheese sauce, which turned out soo good! This was just a quick dinner, so I didn’t make the sauces from scratch, but I’ll definitely try that the next time. Here are the ingredients, and what you do..
Step one
Start by peeling two squash, and slice them thinly with a cheese slicer. Squash contains a lot of water, so put them on some paper towels and add lots of salt as you go. To remove all excess water I put them in a dry pan on medium heat for a few seconds on each side, four slices at a time.
Step two
Chop up a big yellow onion and a couple of cloves of garlic, and put everything in a pan with a little oil for a few minutes to remove the raw taste.
Step three
Cook the ground beef, add the onion and garlic, then add the tomato sauce and let it all boil together for a few minutes.
Step four
Start layering everything in a casserole. First cover the bottom with squash slices, then a layer of the tomato sauce with beef, then a layer of the cheese sauce. Repeat this until the casserole is full, then add grated cheese on top. Put it in the oven at around 200 degrees until the cheese on top melts. I think it was around 15 minutes.
Step five
Serve and enjoy! Lasagna obviously tastes best with warm garlic bread, but if you want to keep it on the healthy side, serve it with a green salad and a little sour cream.
I know the pictures aren’t good at all, it’s so hard to take good pictures inside when it becomes dark outside at 5pm. You just have to take my word for it; It’s delicious!! And not to mention easy to make, and incredibly filling.

Ikke hver dag, hvis kjæresten min jobber sent eller er hos kompiser, eller jeg er med venninner, blir det bare rask middag. Men når begge er hjemme syns jeg det er hyggelig å legge litt ekstra tid i matlagingen :)

Hei! Supert at du lager et slikt inspirerende innlegg som oppmundtrer til å lage mat fra bunnen av! :) Det er bare en ting du kanskje ikke har tenkt over, som jeg bare ville tipse deg om. Det er egentlig ikke såå sunt å bruke “ferdig saus” til å ha oppi lasagnen. Jeg sikter til dolmio glassene. De inneholder mye salt og tilleggsstoffer som man egentlig ikke burde ha i seg. Lag heller tomatsausen fra bunnen av! Det pleier i hvertfall vi å gjøre her hjemme. Det som er så bra med det er at du kan forme din egen smak med forskjellig krydder og urter og evt ha oppi flere grønnsaker. Vi bruker bla cilli, gulrot og paprika for det meste. På den måten får vi i oss ekstra masse grønnsaker :)
