I love cooking and I love sharing recipes, and that’s something that I’ll try to be better at this year. Today I thought I’d share a quick, easy and not to mention delicious snack. This is perfect if you’re not too hungry in the morning but still want something to go on, before bed (I can never sleep if I’m only a tad hungry), or of course just a snack during the day. It takes like five minutes to make, and it’s actually quite filling. Ladies and gents, I present to you the cucumber sandwich:
These four sandwiches became today’s lunch, yums!
I made two different kinds today. On two of them I put a thick layer of spicy creme cheese (both on the bottom and the top), lettuce, avocado, and bacon. On the other two I put on the same things, but I switched the creme cheese to a good chunk of feta cheese (just one layer). After drizzling a salt and pepper mix on top and popping a toothpick through them, they were done!
You can of course put whatever you want on these. For a more filling breakfast I bet slices of hardboiled eggs is delish. You can of course use regular ham in stead of bacon, but I really recommend a little piece of bacon as it adds a delicious crunch to the otherwise soft ingredients. I love both the feta cheese and the cream cheese ones, but my favorite has to be the creme cheese one. Yummy in my tummy!
